This is a quick and easy dish, which is incredibly flavourful. It’s like an asian shrimp scampi, and each bite packs a punch. Mum serves this dish with roti, and there is never any left!
ingredients.
500g peeled prawns
½ a medium onion, sliced
6-8 cloves garlic, finely chopped
½ tsp salt
¼ tsp turmeric
½ tsp chilli flakes or chilli powder (adjust to taste)
¼ tsp mustard seeds
¼ tsp smoked paprika
2 Tbsp lemon juice
-----
Fresh parsley to garnish
process.
Add the turmeric, salt, and paprika to prawns and mix to coat prawns. Heat 1 Tbsp oil, and add the prawns in a single layer. Cook for 2 minutes, and then flip over and cook for another 2 minutes. Take all the prawns off the pan, and set aside.
In the same pan, heat up another tablespoon of oil. Add onions and sauté until lightly browned. Add another pinch of the spices (turmeric and smoked paprika) and sauté for another minute. Add the garlic and continue cooking for 2 minutes. Once the garlic is coated in the onion mixture, add the prawns, mustard seeds, and chilli flakes. Cook for a minute and lastly, add the lemon juice. Continue cooking until the prawns char slightly - and any liquid dries up. If the pan gets too hot, add a tablespoon of water and deglaze the pan.
